As Portland, Oregon, approaches our Two-Hours-of-Storm-Three-Days-of-No-Power season, I find myself instinctually stockpiling fresh water bottles in the closet, clean underwear in the lingerie drawer, and enough ice cubes in the freezer to preserve a mastodon.

Last time we lost power, I had just bought a month’s worth of meat and dairy. When the lights finally flickered back on, I wasn’t willing to roll the dice on that pork roast. Barbecue sauce can cover many culinary transgressions but salmonella ain’t one of them.
