German Pfeffernusse Spice Cookies

This was a holiday tradition in my house, making Pfeffernusse. Full of anise and tossed in powdered sugar, they were either chewy or molar-shattering hard depending on whether you pulled them from the oven in time.

Our filial variation was leaving them in those pointy little pillow shapes instead of rolling them into rounds before baking. Cut far deeper holes in the roof of your mouth and made those annual Christmas carb binges a dangerous undertaking, as they should be.
